Recipe: Fluffy Pancakes
There is nothing like a delicious breakfast or brunch to start your day!
I have two favourites: the classic English Breakfast and the ultimate chocolate chips Pancakes. I never say "no" to either of them, but it did take me a while to find a good, fluffy, tasty vegan pancake recipe and that's why I will share the best one so far for my taste.
You can always play with the ingredients if you prefer a different type of flour, sugar or toppings, plus it's a good way to try new flavours and see what works best for you.

INGREDIENTS
4 Servings
1 cup flour (125g)
2 tablespoons organic sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup non-dairy milk (240ml)
1 tablespoon apple cider vinegar
1 teaspoon vanilla
Coconut oil, for frying
Optional toppings: maple syrup, icing sugar, butter, cinnamon, whipped cream, fruits, chocolate chips.
I made a twist on the original recipe and always add either blueberries or chocolate chips whilst cooking. It's delicious!
PREPARATION
In a medium bowl, add the flour, sugar, baking powder, salt and stir to combine.
In a separate bowl or liquid measuring cup, add your non-dairy milk of choice, apple cider vinegar, vanilla and stir to combine. Let sit for 5-7 minutes.
Pour the liquid mixture into the dry mixture and whisk until smooth.
Let batter rest for 5 minutes.
Add 1/2 teaspoon of coconut oil onto a nonstick pan or griddle and pour about 1/2 cup (65 grams) of batter over medium heat. If you wish, add your favourite toppings.
When the top begins to bubble, flip the pancake and cook until golden.
Serve warm with your choice of topping.
